Potato, Egg and Ham Pancakes – Kid Approved, Kid Friendly Recipe

Potato, Eggs, and Ham Pancakes, bits of potato, ham, and a delicious alternative to the traditional sweet breakfast pancakes.
Kay is super picky. Kay has FPIES. Those two things make cooking for her extremely difficult. Of course she loves sweets, so there’s no problem there! I’m extremely grateful that she’ll eat regular eggs for breakfast. She especially loves them with a little basil and caramelized onions. My issue is getting other foods into her. I love creating kid-friendly recipes that I know she will devour. Like Potato, Egg and Ham Pancakes! It was a winner as soon as I said pancake. Growing up my mother would make me potato latkes. They’re delicious fried potato pancakes with a little egg, lots of potato, matzo meal and oil for frying. I figured if I made that she’d love it, however I wanted to make it a little better!
I’m thrilled at the opportunity to create a Kid-Approved Recipe for Eggland’s Best. We enjoy their organic eggs and the recipe we created uses a half dozen eggs! She gobbled up her pancakes and asked for more right away. It’s loaded with protein to give your child a great start to their day. By making pancakes loaded with eggs I can ensure Kay is having nutrients that will keep her energized and give her the strength and focus she needs throughout the day.
New England Clam Chowder Recipe with Flounder

A rich and creamy New England Clam Chowder recipe where we swapped Flounder for Clams. Very subtle flavor of the sea with the flounder make this a great soup for FPIES trailing something new.
We recently wanted to add another protein to Kay’s diet. Since she has FPIES we have to trial each new food she tries. We’ve contemplated turkey for quite some time, but “chickened” out thanks to her Chicken FPIES food allergy. Doctors typically say that after 18 months to 2 years you can retrial the trigger foods. Since chicken and turkey are so close, we’ve decided to hold off for now. Right now her only safe proteins are beef, pork, salmon, and we’re working on flounder!
Chocolate Chip Scone, Cookies! | Soy Free

It’s a cookie, it’s a scone, it’s Chocolate Chip Scone, Cookies!
I like scones, Kay likes cookies. So I made a combination of the two and we’re both happy! When we went to the Gluten and Allergen Free Expo at the beginning of the month we found a few chocolate brands that don’t contain soy. We typically used Enjoy Life Foods whenever we made chocolate chip cookies, but this time we tried PASCHA chocolate this time. PASCHA is free of the top allergens. I fell in love with the coffee chocolate bar I bought at the expo. Since Kay was diagnosed with FPIES we’ve found so many amazing products and options.
Chocolate Covered Strawberry Vanilla Bean Cheesecake Recipe

My daughter has never enjoyed a bite of cheesecake. She’s two years old! Obviously, with all her new food passes, we had to take it slow and we had a bunch of hiccups. Cream cheese caused us a ton of confusion with her FPIES (what is fpies?) food allergy.
For awhile she would have a chronic reaction whenever she had cream cheese, but she’s never experienced a chronic reaction with any other food. We waited quite a few months to try cream cheese again. Just recently we also found a graham cracker that has NO soy! Plus they’re non-gmo and even organic!
Kay loves to snack on these honey grahams, and as soon as we found these we knew we had to try cream cheese again. Thankfully it went well and she can now safely eat cream cheese! Of course, we had to rush and make a cheesecake. Not just any cheesecake.. but a vanilla bean cheesecake. Kay loves chocolate and berries so we obviously had to top with chocolate covered strawberries. We’re not a fan of cooked down fruit so we just left them as is.
Cookies and Cream Milkshake | FPIES Safe Recipe – Gluten Free, Soy Free, Nut Free

Recently we went to the Gluten and Allergen Free Expo in Secaucus, NJ. Kay had an absolute blast. We went last year and found Enjoy Life Foods Chocolate to trial, and has been by far our favorite food trial. Thankfully Enjoy Life is free of most allergens and of course it’s soy free too! Due to Kay’s FPIES she still cannot eat soy, chicken, or oatmeal. They had a new crunchy cookie this year that we hadn’t tried yet, and Kay fell in love right away! As soon as I tasted the Crunchy Double Chocolate Cookie, I thought.. COOKIES AND CREAM!
