We’re sharing how you can make roasted red pepper hummus for back to school! Super simple and so delicious and we’ve teamed up with the Power Your Lunchbox Pledge campaign.

The first time my mini chef had hummus she planted her entire hand it the bowl after one taste. She then proceeded to lick it off. While I love hummus, I prefer to do that with chocolate.. haha, but this kid loves her hummus and her veggies! She could be completely satisfied with just veggies and hummus for lunch.  We’ve teamed up with Produce for Kids’ again (we LOVE them!).

For this recipe we use tahini, but you can definitely make your roasted red pepper hummus without tahini!

From today, Aug. 8 to Sept. 23, Produce for Kids is encouraging families nationwide to kick off the school year right by pledging to pack a healthier lunchbox. All parents need to do is take the online pledge at PowerYourLunchbox.com to make a $1 donation to Feeding America® children’s programs such as Kids Café, Backpack program and Child Hunger Corps.

In 2015, 10,797 families and classrooms took the pledge to pack a healthier lunchbox and donated 107,970 meals to families in need through Feeding America.

For our lunchbox we thought what better recipe to make with all the delicious produce than hummus! I’ve noticed that we couldn’t find our favorites in organic so we decided to make our own organic hummus a few months ago and we haven’t purchased hummus since. What’s great about making hummus at home? It’s sooooo easy to do and my mini chef can do most of the work. You can make it any flavor you’d like, not just roasted red pepper hummus.

We love to drink fresh juices and Natalie’s juices are soooo delicious! We do 1/2 water and 1/2 juice for her.

Roasted Red Pepper Hummus for Back to School Vegetarian Vegan Bento Lunch Power your Lunchbox Pledge

Roasted Red Pepper Hummus

  • 1 13.4 carton chickpeas
  • 1/4 cup fresh squeezed lemon juice
  • 1/4 cup tahini ((ground sesame seeds))
  • 1/8-1/4 cup water
  • 1/2 roasted red pepper
  • 2 tablespoons olive oil
  • Pinch of cumin
  • Salt to taste
  1. In a blender or food processor combine all ingredients (more or less water depending on how thin or thick you like your hummus)
  2. Top with a drizzle of olive oil and garnish with chopped roasted red pepper if you have extra.
  3. Note: if you remove the skin from your chickpeas you will get a smoother hummus, however my mini chef gave up after doing it to about 5, haha!
