Kid Friendly – Cream Cheese Macaroni

Cream Cheese Macaroni

Sounds weird right?  Cream cheese and Macaroni?  Well I’m not sure who came up with it, but my mom used to make it for me as a kiddo.  I loved macaroni and cheese and this is what I would get whenever she ran out of cheddar.  My mom was the type of cook who would only cook if she had to do it.  The woman COULD cook, just hated doing it.  I think I started cooking by the time I was 13 years old.  I mean really cooking the dinners. I made my first meal around 8.  I’ve always loved being in the kitchen.  I’ll never forget my mom burning dinners – I think it was her way of getting me into the kitchen.  Who wants burnt steak?  Needless to say she really didn’t like it!

She used to make the Cream Cheese Macaroni and put it into a special ramekin dish for me.  I’ll never forget   holding the heart on the end.  It was a circular dish with a flat heart.  I thought my world was over when it broke.  We looked high and low for another to replace it and failed.  At least I still have the memories, and the cream cheese macaroni.  It’s funny how most of my memories of family are around food.  Food is everything to my family for some reason.  Memories, food, family.. love.  I miss my mom, and think about her and my father constantly.  Making dishes like this takes me back.  Back to when everything was okay.  When they were here.  So while I go enjoy my food.. I’ll leave you with a recipe.  

Cream Cheese Macaroni

Cream Cheese Macaroni
Serves 2

2-3 Cups Cooked Elbow Noodles
2 Tablespoons Cream Cheese
1 Teaspoon Butter
2 Tablespoons Milk
Pinch of Salt, Pepper, and Dried Basil

In a sauce pan mix together the ingredients.  Mix constantly over a medium-low fire. Once the cream cheese and butter are melted serve and enjoy.
