Honeycomb Ice Cream Sandwiches

Growing up Post Honeycomb cereal was a family favorite.  Honeycomb cereal was actually my father’s favorite and we always had it in the house.  My favorite way to enjoy Honeycomb cereal is with fresh blueberries and banana slices, it’s so good!  My daughter loves to enjoy Honeycomb cereal plain and without milk! Can you believe Post Honeycomb just celebrated their 50th Birthday?!  Their fun shape and sweet honey taste has been a breakfast favorite for many families for many, many years!  There’s so much more to do with Honeycombs than just eat them in your cereal!  I have been eating them since a baby, 29 years old and loving them still!

I love to show my daughter the old Honeycomb commercials.  She thinks she’s the Honeycomb Monster now and runs around the house screaming “Honeycomb, Honeycomb, me want Honeycomb!!!!!!!”

Our absolute favorite way… is to make Honeycomb Ice Cream Sandwiches!  You love cereal and milk, well you’ll love cereal and ice cream!!  This is a refreshing and incredible little dessert that my daughter begs for!  I can’t blame her, we all love Honeycomb Ice Cream Sandwiches!  They’re bite size and fun.  Best of all they’re easy to make!  You can make this with the original Honeycomb cereal or even the Strawberry one!  We actually like to do whatever ice cream we have in the house and vanilla and real strawberry ice cream are a favorite in our Honeycomb Ice Cream Sandwiches!

I must warn you, these Honeycomb ice cream sandwiches will be gone as soon as you make them.  I haven’t had a chance to freeze them to see how well they freeze since we gobble them right up.  If you freeze them after making let us know how they come out!
