Our Baked Chicken Fajita Recipe uses only one pan for all the ingredients to cook up and you’ll be having restaurant quality dinner in no time! It’s our favorite recipe for chicken fajitas and we make it often.

My husband loves going out to our local Mexican restaurant where they have the best chicken fajitas. The problem? We have to wait forever and a day to get seated and another week to get the food, ha! Okay, I’m exaggerating, it’s about 3 hours total and we could easily be there for 3-4 hours just to get some tasty beef or chicken fajitas. We love making it at home, a good old fajita recipe makes for a great dinner!

Chicken Fajita Recipe

These easy chicken fajitas make dinner a breeze. You can use beef or chicken and just place all the seasoned meat or seasoned chicken right onto a sheet pan with all the sliced peppers and onions. You can use this recipe to make grilled chicken fajitas as well, just leave the chicken whole and vegetables whole. The pepper may get a bit charred on the grill, but you can remove the pepper skin. Slice up the chicken and veggies for the chicken fajitas and wrap up in a soft tortilla. You can also wrap it up as a chicken fajita burrito if you’d like.

Steak Fajita Recipe

If you’re going to make this a steak fajita recipe we suggest using skirt steak or flank steak, these two are our top choices for fajitas and make the best meat for steak fajitas. If you’re getting skirt steak you can ask your butcher to tenderize meat before wrapping up. You will love steak fajitas with whichever meat cut you choose, they’re both great options for homemade fajitas.

How to make Fajitas

Now we’re going to show you. how to make chicken fajitas. First, we’ll start our fajita marinade. You can do a steak or chicken fajita marinade the same way.

Slice up your chicken into strips. Then measure out some of our fajita seasoning with a bit of olive and lime juice and pour over the chicken slices. We use our seasoning recipe instead of a packet, we always have a big jar on hand. This is how we season the chicken for fajitas, once it’s fully marinated we’ll mix this mixture with the veggies to season veggies too. We let the chicken fajita slices marinade for at last 30 minutes, up to 2 hours in the refrigerator, this is how to marinate fajitas safely, that goes for all raw foods (in the refrigerator). Depending on how long you marinate fajitas you now have time to prep the rest of the meal with the time it takes for the seasoning to marinate the meat.

While you let the chicken marinate you can slice up the peppers and onions. This is also a great time to start prepping sides like guacamole, pico de gallo, and fresh tortillas.

Once you fully marinate chicken remove from the fridge. You can now mix the peppers, onions, and chicken onto a sheet pan.This is a hands-on job, but if you’re more comfortable using gloves or tons that’s fine too. We use a parchment lined sheet pan for easy cleanup. We baked our chicken fajitas for 10 minutes, tossed, then cooked for another 10-15 so the chicken is fully cooked (thickest piece of chicken measured 165 degrees F internally).

We prefer flour tortillas for our chicken fajita recipe. We use fresh ingredients and really control what we’re putting into the fajita mix and make sure we’re getting the best quality too. Instead of making homemade tortillas myself I use TortillaLand uncooked flour or corn tortillas and even organic. You can find them right at your local Costco right in the refrigerated section. They’re extremely fresh and I like that I can bake them right before we stuff the flour tortilla with our fajita recipe.

When you buy your tortillas, you will find it’s a 50 count package. This is perfect for making tacos, fajitas, burritos, and even chips! You can use it from breakfast to dessert. Tortillas are so versatile, and the whole family loves them. They make fun meals for kids too. Kids LOVE handheld or dipping.  If you can’t use all the tortillas, not to worry, you can freeze them and save for later too.

Baked Chicken Fajitas

Once the chicken fajita mix is done you can pile it right onto your hot flour tortilla. Have guests that are gluten free? Use a corn tortilla or a bed of rice, make sure the corn tortillas are free from wheat contamination. Our oven baked fajitas are always a hit.

With Cinco de Mayo around the corner, you’ll love this Baked Chicken Fajita Recipe for dinner. I simply cook the chicken, peppers, and onions right on the same pan. Everything tastes so delicious and is full of flavor.  I don’t use packets for our seasoning, instead, I make homemade fajita seasoning mix, and I can use as much or as little as I want for taste. Now you can make this chicken fajitas recipe as often as you like!

We like to serve with yogurt instead of sour cream, our Pico de Gallo Recipe, Guacamole, and lime wedges. You can also use cheese, rice, and lettuce if you like!

If you do not like chicken, you can easily swap out the protein in this recipe. I’ve also done this with steak, shrimp, and even chickpeas. I love chickpeas, and they take on the flavor too! It’s a great way to serve a vegetarian and vegan option for guests.

Recipe for Chicken Fajitas

Baked Chicken Fajita Recipe

  • 3 Chicken Breasts (, sliced into strips)
  • 1 tablespoon olive oil
  • 1 lime
  • 1 ½ tablespoons fajita seasoning
  • 1 red pepper (, sliced)
  • 1 yellow pepper (, sliced)
  • 1 green pepper (, sliced)
  • 1 large onion (, sliced)
  1. Preheat oven to 400 degrees.
  2. Place chicken into a large bowl and place in olive oil, juice of lime, and seasoning. Marinate for 30 minutes to 2 hours.
  3. Place chicken onto a sheet pan with onions and peppers, mixing thoroughly.
  4. Cook for about 10 minutes and then mix/toss peppers and chicken.
  5. Cook for another 10-15 minutes or until chicken is fully cooked (165 degrees F).
  6. While chicken is cooking cook your TortillaLand Tortillas using a nonstick skillet.
  7. When the skillet is hot, put the tortilla into the pan.
  8. Cook tortillas 30 seconds on each side.
  9. Place tortillas on a kitchen cloth and wrap to keep warm
  10. Fill tortillas with fajita mixture.
  11. Serve with sour cream, fresh salsa, guacamole, cheese, lettuce, and rice.
